Baked “nests” with pollock
Ingredients:
- baguette – 200 g
- pollock fillet – 250 g
- onions – 100 g
- dill – 1 bunch
- cheese – 80 g
- milk – 1 cup
- vegetable oil – 2 tbsp. l.
Directions:
1. Peel the onion and chop finely, put it in a bowl. Chop the pollock fillet and dill in the same way. Add them to the onion, salt and pepper to taste. Mix all the ingredients thoroughly.
2. Cut the baguette into slices about 2-3 cm thick. Dip each piece in milk on both sides. Lightly grease baking dishes with vegetable oil, place the milk-soaked slices in them and make a depression in the center of each of them with your fingers to create “nests” for the filling.
3. Fill the prepared depressions with the fish filling, lightly grease the top of the filling with mayonnaise and sprinkle with grated cheese.
4. Place the molds with “nests” in the oven preheated to 180°C, and bake for 40-45 minutes.
Potato baskets with herring
Ingredients:
For the baskets:
- potatoes – 300 g
- 1 chicken egg
- cheese – 50 g
For the filling:
- herring fillet – 200 g
- red onion – 80 g
- boiled eggs – 2 pcs.
- pickled cucumbers – 1–2 pcs.
- hard cheese – 50 g
- curd cheese – 30 g / 2 tbsp. spoons
- garlic – 2 cloveschika
- vinegar – 1 teaspoon
- sugar – 1 pinch
mayonnaise – 2 tbsp. spoons


Method of preparation:
1. In a bowl, mix the grated potatoes and cheese with the chicken egg, add salt and black pepper to taste. Mix the ingredients thoroughly until you get a homogeneous, plastic mass similar to dough.
2. Evenly distribute the potato dough among the muffin tins, pressing it well to the bottom and sides to form “cups”. Place them in an oven preheated to 180° C for 40-50 minutes.
3. Thinly slice the red onion. Drizzle it with a few drops of balsamic vinegar, add a pinch of sugar and mix gently – this will soften the taste of the onion and give it a pleasant piquancy.
4. Remove bones from the herring fillet and cut into small cubes.
5. Cut the boiled eggs into cubes the same size as the herring. Add finely chopped pickled cucumbers, grated hard cheese, cream cheese, pressed garlic, and mayonnaise. Mix all ingredients until smooth.
6. Place a layer of pickled red onion at the bottom of each basket, arrange the herring cubes on top of the onion, and then top with a spoonful of the prepared salad. Before serving, garnish the baskets with a sprig of fresh herbs.
Canapes with herring salad
Ingredients:
- rye bread – 200 g
- herring fillet – 200 g
- pickled cucumbers – 2 pcs.
- boiled eggs – 2 pcs.
- onions – 1 pc.
- green onions – 1 bunch
- apple cider vinegar – 1 tbsp. spoon
- olive oil – 1 tbsp. spoon
- mustard – 1 teaspoon
- mayonnaise – 1 teaspoon


Method of preparation:
1. Cut pickled cucumbers, onions and boiled eggs into small cubes. Place everything in a deep bowl.
2. Carefully clean the herring fillet of all bones and cut into cubes. Add the herring to the bowl with the other ingredients. Put finely chopped green onions, season with mayonnaise and mix.
3. In a separate deep bowl, combine mustard and olive oil. Pour in apple cider vinegar and add salt to taste, mix again. Add the resulting dressing to the salad. Mix it until smooth.
4. Place a tablespoon of the prepared fish salad on slices of rye bread. Before serving, you can garnish each canape with green onions.
Tuna rolls
Ingredients:
- lavash – 200 g
- tuna – 200 g
- chicken egg – 120 g
- cream cheese – 120 g
- corn – 120 g
- cucumber – 150 g
Directions:
1. Place the lavash on cling film. Spread the soft cream cheese evenly and thinly over its entire surface.
2. Spread the tuna meat, mashed with a fork, on top of the cheese. Then, in turn, lay out an even layer of boiled eggs grated on a medium grater, corn kernels and fresh cucumbers cut into thin long strips.
3. Roll the lavash into a tight roll and put it in the refrigerator for 2 hours.
4. Remove the roll from the refrigerator, remove the cling film and, using a sharp knife, cut it into portions 2-3 centimeters thick. Place on a plate and serve.
Salad with salmon and eggs
Ingredients:
- boiled potatoes – 250 g
- boiled carrots – 150 g
- boiled eggs – 2 pcs.
- salmon fillet – 150 g
- red onion – 70 g
- lemon juice – 1 tbsp.
- dill – 15 g
- mayonnaise – 2 tbsp. spoons
- sour cream – 2 tbsp. spoons
Directions:
1. Cut potatoes, carrots and boiled eggs into small cubes of approximately the same size.
2. Peel, wash and finely chop the red onion. Transfer it to a small bowl, pour over freshly squeezed lemon juice, salt and pepper. Mix carefully and leave to marinate for 10 minutes.
3. Cut the salmon into small pieces about the same size as the vegetable cubes.
4. Carefully place all the prepared ingredients in a spacious salad bowl: potatoes, carrots, eggs, pickled red onions and salmon pieces.
5. Finely chop fresh dill and add to the salad bowl with the other ingredients.
6. Season the salad with a mixture of mayonnaise and sour cream, add salt and pepper to taste. Mix all the ingredients.
