David Emmerle at the restaurant Motto Azabu – September 9
You ask, what is the famous French chef going to do in a Japanese restaurant? This will mark the beginning of the Yon-Te four-handed dinners, which Motto Azabu’s executive chef, Vadim Malkov, and David Emmerle, currently head of the kitchen at Barvikha Hotel & Spa, will host together. The idea behind this project is to offer a different perspective on modern Tokyo, which interprets Western traditions based on Eastern ones, while the rest of the world absorbs and transforms in its own way everything Japan reveals. Guests at the dinner (19,500 rubles) will be introduced to the chefs’ unique perspectives on washoku and yoshok, and will be able to appreciate the mastery of each chef and the virtuoso collaboration between them. By the way, this is not their first meeting in the same kitchen: Vadim Malkov and David Emmerle once worked together at Four Seasons Moscow.

Motto Azabu RestaurantCutting bluefin tuna at IMA restaurant – September 9
At another, no less premium Japanese restaurant, they decided to look at the Land of the Rising Sun through authentic products, techniques and rituals. The latter undoubtedly includes tuna cutting. Next Wednesday, a huge tuna imported from Japan will essentially be the centerpiece of another traditional gastronomic ritual—omakase. Artemy Lopatin, executive chef of Jun, Kiyomi, and Bus restaurants, will cut the bluefin into akami (the lean back), chu-toro (the medium-fat belly), and o-toro (the fattiest belly), then prepare five special dishes from various parts of the tuna. Guests will also have the opportunity to choose from exquisite salmon dishes, prepared during the cutting by Tokyo-based IMA chef Takumi Wada-san and his team. In the future, each evening of the “Discovering Japan” series will be dedicated to a separate theme, so that regulars of the restaurant have the most comprehensive impression of the history, culture and gastronomy of this amazing country.
